A format designed to enhance summer fresh dishes, with an offer that combines the authenticity of Parmigiano Reggiano PDO with the versatility of Spinoro, a 100% Italian hard cheese also suitable for vegetarians.

DalterFood Group presents Parmigiano Reggiano and Spinoro shavings for the food industry

 In a context where the food industry is expected to develop increasingly distinctive, practical products aligned with consumption trends, the choice of ingredients plays a strategic role. Within this scenario, DalterFood Group – a company with over 45 years of experience in the national and international dairy sector—offers its Parmigiano Reggiano shavings as a solution that combines raw material quality, ease of use, and enhancement of the final product. 

Made from Parmigiano Reggiano PDO produced in the Group’s dairies located in the Reggio Emilia Apennines, through a short and controlled supply chain, these “shavings” stand out for their square, regular format, designed to ensure visual consistency and easy integration into a wide range of industrial applications. They are ideal for enhancing the flavour of light, fresh summer dishes such as ready-to-eat salads, pasta salads, and other seasonal ready meals. They are also an excellent accompaniment to carpaccio and packaged cured meats, and can add a premium touch to ready-made pizzas. 

For companies operating in the organic segment, DalterFood Group also offers organic-certified Parmigiano Reggiano, compliant with organic farming standards and fully integrable into high value-added product lines. 

Completing the range is Spinoro “shavings”, a mature hard cheese produced in Italy with 100% Italian cow’s milk sourced from farms in the Po Valley (Northern Italy). Thanks to the use of microbial rennet, Spinoro is also suitable for vegetarian consumers, enabling food companies to expand their product portfolios with offerings aligned with increasingly specific dietary requirements, without compromising on taste.  

Further strengthening the offer is DalterFood Group’s consultant-style and tailor-made approach, which allows both the cut size and packaging to be customized according to specific customer needs and intended use. While maintaining the characteristic regular square format, the “shavings” can be developed in different sizes—such as 2×2 cm, 4×4 cm, or 5×5 cm—to best suit recipes and the desired final presentation. 

On the packaging side, DalterFood Group offers 500 g and 1000 g trays designed to meet the operational and logistical needs of the food industry. These are complemented by single-serve sachets made 100% by recyclable plastic, particularly suitable for inclusion in ready-to-eat salads, ready-made soups, and trays of carpaccio and cured meats, where they add a service component to the final product. This practical solution helps reduce waste and responds to the growing focus on sustainability.
