Addressing Key Industry Questions

Is it genetically modified? No. The strains are naturally selected, high-protein Saccharomyces cerevisiae with no genetic editing. Every batch is fully traceable with comprehensive strain testing records.

Is it high in purines? No. Food-grade yeast protein undergoes nucleic acid removal, controlling nucleic acid content to ≤2 g/100 g and total purines to 0.090–3.5 mg/g — firmly low-purine. Clinical data confirms long-term consumption does not raise uric acid levels in the general population.

What about allergenicity? Yeast protein is free from the eight major regulated allergens, making it a highly hypoallergenic source — a critical advantage for sensitive-consumer and clean-label markets.

Application Showcase: Plant-Based Ultra-High-Protein Toast

To demonstrate Angeopro™ in real-world plant-based baking, here is an ultra-high-protein toast formulation — fully plant-based with no dairy or animal derivatives, delivering approximately 22 g of protein per 100 g.

Process. Weigh → mix → divide → round → rest → mould → proof → bake → finish. Mix all ingredients except plant-based butter on slow speed for 4 min, then fast speed until dough forms; add plant-based butter, slow mix until absorbed, then fast mix to window-pane stage. Dough temperature 26–28 °C. Rest 15 min. Divide 400 g/piece, mould, and proof at 37 °C to 80% of tin height. Bake uncovered: top 180 °C / bottom 200 °C, 30 min; or covered: top 200 °C / bottom 200 °C, 30 min. Customers may further optimise flavours on this yeast-protein base.
