Hiperbaric Launches State-of-the-Art HPP Pilot Plant in Shanghai, China

Hiperbaric, the global leader in High Pressure Processing (HPP) technology, announces the official opening of its new pilot plant facility, HPP Incubator Shanghai. Located in Shanghai’s Free Trade Zone, the facility is equipped with an entry-level Hiperbaric 55 HPP system capable of processing up to 270kg per hour. The HPP Incubator Shanghai will serve as a product development hub for food and beverage companies across Asia.

HPP is a non-thermal food preservation technique that uses ultra-high pressure, pure cold water to inactivate harmful pathogens and spoilage microorganisms in packaged foods. This natural process maintains the nutritional value, fresh flavors, and textures of food and beverage products.

To lead this strategic initiative, Hiperbaric has appointed Jizhou Lei, Ph. D. as HPP Food Applications Specialist. Lei brings valuable expertise to the role, having earned her Bachelor’s degree from The Ohio State University and a Master’s degree in Food Science from Cornell University.

HPP Incubator Shanghai, Product Development Services to Asian Food & Beverage Companies

“The HPP Incubator Shanghai represents our commitment to fostering innovation in the Asian food and beverage sector,” said Andrés Hernando, CEO of Hiperbaric. “Under Cloris Lei’s leadership, we are already collaborating with several regional producers to advance their HPP product development initiatives.”

“This pilot plant is a game-changing resource for food and beverage companies in Asia,” said Jorge Marraud, Director of Hiperbaric Asia. “By providing local access to our HPP technology and expertise, we’re removing barriers to innovation and helping companies bring safer, cleaner-label products to market faster than ever before.”

The facility offers a comprehensive suite of complimentary services to food and beverage manufacturers, including:

  • Full-scale product trials using the Hiperbaric 55 HPP system
  • Food science technical support for product development
  • HPP packaging validation
  • Processing parameters optimization
  • Regulatory compliance guidance
  • Shelf-life studies and validation support

“We’re excited to see strong interest from regional food and beverage companies who are already utilizing our pilot plant facilities,” said Lei. “Our team’s extensive experience in HPP technology enables us to provide comprehensive support throughout the product development journey, from initial concept to market-ready products.”

The pilot plant augments Hiperbaric’s existing presence in China, where the company has operated since 2009. This new facility demonstrates Hiperbaric’s ongoing commitment to the Asian market and its mission to advance HPP technology adoption in the region’s food and beverage industry.
