HPP Innovation Week, the leading virtual event for the high-pressure processing (HPP) industry, concluded with remarkable success, attracting over 1,000 registered attendees from around the world. The event provided a comprehensive platform for food and beverage professionals to explore the latest advancements, with participation from industry leaders, academic institutions, and key service providers like Universal Pure and Cornell University in the US, Apa Processing in Europe, and IPB University from Asia.

HPP Innovation Week, the leading virtual event for high-pressure processing (HPP), concluded with remarkable success. More than 1,000 food and beverage professionals from around the world gathered to explore the latest HPP technological advancements. The event reinforced HPP’s transformation from specialized technology to a mainstream solution, addressing critical industry challenges including food safety, shelf life extension, clean label demands, and sustainability.

The three-day program featured industry leaders, academic institutions, and key HPP tolling service providers including Universal Pure and Cornell University (US), APA Processing (Europe), and IPB University (Asia), highlighting HPP’s global reach and collaborative ecosystem.

Regional Market Insights Reveal Diverse Growth Drivers

Prior to the event, Hiperbaric hosted a webinar, titled, “Global Perspectives on HPP: Market Trends, Applications, and Success Stories,” which brought together regional experts to examine technology adoption patterns across continents, revealing unique market dynamics driving HPP growth worldwide.

North America: Automation and Clean Labels Accelerate Adoption

“The push for clean-label and minimally processed products in North America is undeniable,” said Roberto Peregrina, Hiperbaric USA Director. “Retailers and foodservice operators are championing HPP to enhance food safety and reduce recalls, driving a parallel trend toward automation for highly efficient, continuous operations.”

Key growth opportunities include raw pet food and dairy products, with automation enabling scalable production to meet increasing demand.

Latin America: Natural Resources Meet Export Opportunities

Maria Barreal, Hiperbaric Sales Specialist for Latin America, positioned the region as ideally suited for HPP expansion. “Latin America’s wealth of natural resources—from avocados to tropical fruits—creates perfect conditions for HPP adoption. The technology unlocks international markets for our producers by preserving freshness while meeting stringent export food safety standards.”

Success stories include Juancamole in Colombia and Productos Fernandez in Chile, demonstrating HPP’s ability to minimize recall risks for key exports.

Europe: Sustainability and Food Safety Drive Innovation

European markets prioritize sustainability and food safety, according to Marta Onrubia, HPP Sales Manager for Europe. “We’re seeing strong focus on reducing food waste through HPP upcycling of aesthetically imperfect produce into high-value beverages, soups and dips,” she noted.

Southern Europe leads adoption rates, with tolling services playing a crucial role in making HPP accessible across the continent. The seafood category, particularly shellfish shucking, represents a major growth frontier.

Middle East & Africa: Emerging Markets Poised for Growth

“The Middle East and Africa are vibrant, emerging markets with immense HPP potential,” said Pedro Artola, HPP specialist for the region. “Shelf-life extension is a key driver, especially for clients working with major airlines requiring longer-lasting fresh products. Growing urban populations are creating new demand for convenient, healthy products.”

Asia: Consumer-Driven Demand Fuels Market Expansion

The Asian market stands out for consumer preference driving HPP growth, explained Jorge Marraud, Hiperbaric Asia Director. “In Asia, the consumer is king. Demand for tastier, more natural products has led retailers to specifically request HPP products, now featured on packaging as a quality mark.”

Strong industry-academia collaborations, including partnerships with IPB University, support innovation in applications like ready-to-eat meals and culturally unique fruits such as durian.

Live Q&A sessions generated considerable interest and high participation across all geographical regions, demonstrating strong audience engagement and enabling in-depth exploration of market-specific trends and opportunities.

Global Impact and Future Outlook

The insights from HPP Innovation Week illustrate a technology that has matured into a global standard, empowering brands to deliver safer, healthier, and more sustainable food products worldwide. Since its inception, the event has attracted more than 6,000 professionals from over 60 countries across five editions.
